Bean Thread or glass noodless (also known as Chinese vermicelli, crystal noodles, cellophane noodles etc.) are a thin, transparent type of Asian noodle. Glass noodless are usually made of bean and peas flour (starch). China, Japan and Thailand all have traditional dishes which utilize cellophane noodles, and all of these countries also make the noodles for domestic use and export. These noodles are very hard and opaque when dry but become soft and transparent when cooked. They are called "cellophane noodles" or "glass noodles" because of their appearance when cooked, resembling cellophane, a clear material or a translucent light gray or brownish-gray color. Bean Thread should not be confused with rice vermicelli, which are made from rice and are white in color rather than clear.
